Cá Hồi Và Tôm Chiên Bơ (Butter Fried Salmon and Shrimp Rolls)


If you've noticed, Eat Well. Stay Hungry! is my new motto. As I am approaching the BIG 4-0, my body is changing and I'm starting to notice the physical effects from the lack of exercise and periodic poor eating habits.

Since my girls have gone back to school this August, I have committed to eating breakfast and running with them almost every morning on the field at their school. In the past, the first thing I did when I wake up in the morning was picking up around the house, arranging the pillows on the sofa, sweeping the floor, then taking the kids to school. As soon as I came home, I made a bee line for the kitchen and prepared food to bring to school so my girls can enjoy their fresh and warm lunch. By the time I looked at the clock, it was past lunch time, and that was when I had my first meal of the day. I still continue my daily routine but now I make sure to eat breakfast, drink more water and hot tea and get some exercise in between.

Eat Well. Stay Hungry!, this motto reminds me to eat quality food - a variety of food - but more importantly eat healthy food. At the same time I can never be quite satisfied. To me, it's about striking a balance between fresh, quality food, incorporating creativity in the kitchen and enjoying it with family and friends. When I prepare food for my family, I pay more attention to what I put in it. It's true that when my body feels good, I do feel happier inside and out. I know change is hard but it's not impossible. After all, “The journey of a thousand miles begins with a single step” - that's both a mental and physical step; okay, so maybe two steps.

Let's start out with this I-Can't-Believe-It's-Not-Butter fried salmon-and-shrimp roll. Doesn't that sound good? It's fried, but at least it's not with butter and the salmon and shrimps combo along with all your herbs and greens can be quite healthy. Now, if you want to step it up a notch, I recommend using extra virgin olive oil to fry or grill as it has a higher smoke point - about 405 degrees. Virgin olive oil or extra light olive oil are even better, but pricier as expected.

I usually like to serve this type of meal when I don't have enough time to cook the food. The food and an electric grill pan are placed in the center of the table while everyone helps herself to cooking with chopsticks. It is a delicious and tasty meal that you can prepare within just half an hour. The fried salmon and shrimp, along with sweet onion, rolled with noodle, baby spring mix salad, herbs, and cucumber in rice paper then dipped into my signature shrimp paste sauce or tamarind fish sauce will appease your palate. The grilled sweet onion will make you drool for more.

RECIPE: Cá Hồi Và Tôm Chiên Bơ

Ingredients

for Frying
1-2 pounds Salmon Fillet, skinless
1-2 pounds Shrimp, deveined and peeled 
1 Sweet Onion, thinly sliced
stick of margarine or extra virgin olive oil

for Shrimp Sauce Dipping Sauce
2 tablespoons Shrimp Sauce 
1 piece Pineapple, finely minced or pureed
1 tablespoon, finely chopped Lemongrass
1 tablespoon, finely chopped Garlic
1 tablespoon Shallot, thinly sliced
1 tablespoon Ginger, finely chopped
1/2 cup Coco Rico Soda, or Coconut water
1/2 small Lime, juiced
1 tablespoon Sugar

Healthy Condiments

1 package of  fine Rice Vermicelli
Baby Spring Mix Salad, or Romain Lettuce
assorted Vietnamese Herbs 
1 English Cucumber or Baby Cucumbers
1 package of Rice Paper, I prefer Three Ladies brand

Directions

Cooking Noodle


While bringing a pot of water to a boil, soak rice vermicelli in hot sink water. Once the water is boiling, add  rice vermicelli to the pot. Cook for approximately 5 minutes or when softens and thickens. Rinse with cold water and drain. Set aside.

Cooking Shrimp Sauce Dipping Sauce


In a sauce pan, bring a tablespoon of oil on medium heat. Once it's hot, add lemongrass, ginger, shallot, and garlic.



Saute until they start to turn slightly brown. Add pineapple, shrimp sauce, Coco Rico soda or coconut water and sugar. Mix it well.


Once the sauce is blended well and start to boil, remove from heat. Add lime juice. Transfer the sauce to a serving bowl. Add garlic chili sauce for spicy flavor. Set aside.

If you like the taste of  raw shrimp sauce in the dipping sauce, you can eliminate a few ingredients, and the cooking process.   It can be simply prepared by adding sugar to Coco Rico soda or coconut water to dissolve. Mix in shrimp sauce , pineapple pureed, red chili pepper and garlic. Set aside until ready to use.

Preparing Sweet Onion


Cut onion into rings.  Set aside.

Preparing Salmon and Shrimps


Cut salmon into 2x1 thick pieces.  In a serving plate, place salmon, shrimps, and garnish with sweet onions on top.  Set aside.

Preparing I-Can't-Believe-It's-Not-Butter


Use olive oil or cut margarine into small sticks. Set aside.

Preparing Vegetables


Place salad and herbs into a serving bowl.  Set aside.


Cut cucumber into pieces about 4-in long.  Set aside.

Presentation


Place all the dishes and an electric grill pan or a griddle in the center of the table. 

In a frying pan, add margarine and onion. Once onion has caramelized, add in salmon and shrimp. 


Once salmon and shrimps are golden brown and crisp, moisten the rice paper in warm water and lay it on a plate. 


Place the vegetables, noodle, and cooked salmon and shrimp on the rice paper. Fold at ends and roll into a cylinder. 


Dip the roll into your favorite sauce, taste every morsel and wash it down with a nice glass of Riesling.

Bánh Xèo (Sizzling Savory Crepe)


Bánh xèo tastes best on a cold and raining day. There's something about the cold and rain that beckon my senses to the beautiful sizzling aroma of turmeric, pork, shrimp, green scallion and bean sprouts. What could be better than enjoying a piping hot, crunchy delicious bánh xèo while listening to the falling rain from the kitchen nook on a cold crisp lazy afternoon? Maybe washing it all down with a exquisitely chilled lucky Buddha beer.

Bánh xèo, literally translates to "sizzling cake", apparently named for the inviting sizzle when the batter meets the fryer. Southern-style bánh xèo contains coconut milk while certain central regions of Vietnam skip the coconut milk and sometimes the turmeric powder altogether. My girls are not too fond of the coconut milk so I usually skip it. My older daughter thinks turmeric is not only a powerful medicine that has many health benefits but also makes one smarter just by eating it once a week. I guess I need to come up with more dishes that require turmeric.

Bánh xèo is traditionally made with rice flour and water but there are many methods that we can use to make it crispier.  These include mixing rice flour with beer instead of water; mixing wheat flour with rice flour; grinding mung bean with rice to make the batter; mixing rice flour with baking powder.  My mother usually squeezes some fresh lime juice into her rice batter to achieve this as well.





A few months back, after looking at the lush mustard greens, chrysanthemum greens and varietal herbs growing in my vegetable garden, I could't resist the idea of bánh xèo. I found a couple bags of rice flour and cornstarch in the pantry. The chicken tenderloin and shrimps were in the freezer. I dug out some mango and mushrooms from the fridge. I decided to experiment a bánh xèo batter made of rice flour with cornstarch and lime juice. The result was beyond my expectation. After a few more tries to the achieve the same texture and paper thin crust, it was ready to be shared.

Recipe: Bánh Xèo

Ingredients

for Batter


4 cups (16 oz) Rice Flour
3 tablespoons Corn Starch
4 cups Water
1 tablespoon Lime Juice
1/2 tablespoon Turmeric Powder
1/2 tablespoon Salt
1/2 cup finely cut Green Onion

for Filling


1 pound of pork belly, thinly sliced
1 pound medium size Shrimp, deveined and peeled
1 teaspoon Salt
1 teaspoon Sugar
1 teaspoon Ground Pepper
1 teaspoon Garlic Powder
Mushrooms (king oyster, enoki, and oyster mushrooms are my favorite)
2 bags Bean Sprout
Cooking Oil

For Fish Sauce Dipping


1/4 cup Fish Sauce
1/4 cup Sugar
1/8 cup fresh Lime Juice
1/2 cup Water
1 tablespoon Garlic, finely minced
1-2 Red Chili Pepper, finely minced

Healthy Condiments


Lettuce Leaves or Mustard Greens or Chrysanthemum Greens
Cucumbers, sliced
Mango or Granny Smith, cut into julienne strips, optional
assorted Herbs

Directions

Making Dipping Sauce 


Combine all the fish sauce dipping ingredients in a mixing bowl and mix well until sugar dissolves. Set aside.

Preparing Batter


Combine the batter ingredients in a bowl and stir until well blended.

Preparing Filling


In a skillet, add pork and cook for about 5 minutes until the fat part becomes transparent. Add shrimps and seasoning with salt, sugar, ground pepper, and garlic powder, and mix well. Cook for a couple more minutes. The meat and shrimps don't need to be cooked all the way. Remove from heat.

Frying Bánh Xèo


Heat a non-stick pan over medium-low heat.  Drizzle cooking oil into the pan. Add a few pieces of pork, shrimps and mushrooms, and cook until the meat and shrimps are golden brown. Spread the filling evenly on the pan.


Stir batter well and ladle about 1/4 cup of the batter and quickly tilt to evenly coat the surface. The thinner the layer the better, so try to ladle less batter if the first one is too thick.


Top the batter with bean sprouts. Place a lid over for about a minute.


Remove the lid. I sometime drizzle a little more oil around the edges to make it extra crispy. When crepe begins to curl up on the edges and turns golden brown and crispy, fold the crepe in half.

Gently remove the crepe to a serving plate. Repeat with remaining batter and ingredients.

Presentation


Bánh xèo is served wrapped in mustard leaf, lettuce leaf or rice paper and stuffed with assorted herbs, and dipped in a fish sauce dipping. It's a great way to catch up on your herbs and vegetables! 


Besides the basic vegetables and herbs, I also like to add some sweet, mildly tart and crunchy mango or Granny Smith apple, or try adding pickled daikon and carrot to create a different level of texture while adding more fruits or veggies.



Bánh xèo will lose it crispiness if made in advance. To make bánh xèo crispy again, broil crepe on low for a few minutes. Make sure to leave the oven door open slightly open while broiling.

Loaves and Fishes

There was a time during my college years when I went through a depressive phase. I didn't see the meaning and  purpose in life but a life full of sins and sorrows. I woke up to the morning with a sense of gloom and a constant weight on my chest; my heart felt twisted and frail. I sobbed. I felt hopeless at times and life to me became meaningless. I often wondered why we're afraid to die but choose to live in a world full of worries and stress and knowing all the while that we're going to die someday. Though I was surrounded by a loving family and great friends, it didn't stop me from feeling lonely, sad, and inferior.

Life lacked purpose.

During my freshman year, I worried about life too much and made mine miserable;  I was burdened by unnecessary stress. Whenever I saw homeless people standing on the streets begging for money or sleeping on the ground, it tugged at my heart and my eyes would tear up. I pitied them and worried that I would end up like one of them.

A couple years later, I took a philosophy class; it gave me a different perspective. This marked the beginning of a new path for me. The first twenty years of my life, I was a buddhist, but I've always been curious about christianity and had the opportunity to explore this religion a little more through the writings of philosophers and readings from the bible. The more I learned about God's love and the forgiveness of sins through the sacrifice of Jesus Christ, I found peace and purpose. I acknowledged Him and He directed my path.

During this time, I also met the love of my life who has been guiding  me through the winding path of life. He's taught me so much about love, forgiveness, and acceptance towards others and that the meaning of life is not just predicated on what we do for ourselves, but more so in what we can do for others.  He is the kind of person who would offer a stranger a  ride to work when her car broke down in the middle of the road. He's a humble and a selfless man who would take a moment to buy a homeless man a meal when rushing home after a long hectic day at work.  He's the kind of person you can count on when push comes to shove.

I'm grateful.

Now that we have two daughters, I want to cultivate the values of love, sharing, kindness, and compassion in their lives. Our hope is that they can see that there's significant joy and fulfillment in helping others.

Two Thanksgivings ago, I took my daughters to the Sacramento Loaves and Fishes. They got to meet many homeless people and visited the Mustard Seed school where homeless children attend. Prior to our arrival, my girls and I took a trip to the flea market and bought some essentials such as socks, shirts, soaps, toothbrushes, toothpastes for these children. My daughters packed them up in individual bags and I drove them to the Mustard Seed school the next morning to deliver them to the children.

We made another trip to Loaves and Fishes this past July. We went to store to buy snacks and drinks for the children. I'm so grateful that my girls are always excited when it comes to giving and helping the less fortunate. It's really a thing of beauty. I hope it's something they'll treasure when they become adults and continue to give . . . and give more abundantly.


It was around noon when we arrived at Loaves and Fishes. As always, we saw the homeless walking around the campus. Some were lining up to receive meals and living essentials. My girls were curious about where the children sleep at night and were surprised to find out that some children sleep on the streets, some sleep in the cars, and the rest stay in the shelter. During the day, these children gather here for school, food, and showers.



This time, we didn't get to see the children as they went swimming at a community pool located at the nearby Mckinley Park. Instead the lady gave us a tour around the Mustard Seed school and showed the girls the classrooms and explained to my girls how things work around here.

This early September, we prepared lunch bags full of goodies, fruit, drinks, and warm sandwiches and delivered them to the children at Sacramento Loaves and Fishes. My girls were disappointed that they were not able to come with me because it fell on a weekday and they had to attend school.




It was 10:30 am when I arrived at the Sacramento Loaves and Fishes.  The children were still in class learning and again I didn't get to see them.  This picture below shows where they have lunch everyday.


My next plan is to recruit a crew to prepare and serve hot lunch to all those who come to Loaves and Fishes.


My girls didn't fully understand why people are homeless and for many of us, we couldn't fathom that idea either given the bounty of this country. But no matter what circumstances led them to this state, we have an opportunity to make a difference and maybe kindle a flicker of hope. Rest assured that these people will never know your name, how hard you have worked to earn your money or what hardships you may have endured, but I believe that no good work will be in vain. Learning to give begets meaning and purpose. The beauty in giving is that we can be complete strangers and yet with a seemingly simple act can restore faith and move mountains.

Tôi không nhìn thấy ý nghĩa và mục đích trong cuộc sống mà chỉ là một cuộc sống tràn đầy tội lỗi và thương đau. Mỗi sáng thức dậy, tôi cảm nhận rõ nơi trái tim mình một nỗi cô đơn, sự muộn phiền gieo nơi đáy mắt, có cả sự yếu đuối run rẩy trong ý nghĩ cho những điều sắp đến với mình. Tôi không nghĩ được gì nhiều hơn. Và tôi đã khóc cho chính sự bế tắc của bản thân. Tôi thật sự vô vọng và thấy cuộc sống vô nghĩa đến nhường nào; rồi tự hỏi tại sao chúng ta sợ chết nhưng chọn để sống trong một thế giới đầy lo âu và căng thẳng khi biết rằng rồi có một ngày, mỗi chúng ta đều sẽ trở về với cát bụi. Dù tôi được bao bọc bởi một gia đình yêu thương và những người bạn tuyệt vời, nhưng điều đó cũng không ngăn cản tôi khỏi cái cảm giác cô đơn, buồn chán và thấp kém.

Cuộc sống của tôi thiếu mục đích! 

Năm đầu tiên bước vào đại học, tôi luôn lo lắng về cuộc sống và tương lai quá nhiều và đã làm cuộc sống của tôi thật đáng thương; Tôi đã bị đè nặng bởi sự căng thẳng không cần thiết. Bất cứ khi nào tôi thấy những người vô gia cư đang đứng trên đường phố xin tiền hoặc ngủ trên mặt đất, trái tim tôi quặn đau và đôi mắt tôi xé cay. Cảm giác thương xót thêm phần lo lắng cho số phận của tôi sẽ giống như họ! 

Hai năm sau đó, tôi lấy lớp học triết học; nó đã cho tôi một cái nhìn khác. Điều này đánh dấu sự khởi đầu của một con đường mới cho tôi. Hai mươi năm đầu tiên của cuộc đời tôi, tôi là một phật tử, nhưng tôi luôn tò mò về Kitô giáo và tôi đã có cơ hội để khám phá tôn giáo này với một chút chiều sâu về tín ngưỡng thông qua các tác phẩm của các triết gia và đọc kinh thánh. Càng học được về tình yêu của Thiên Chúa và sự tha thứ tội lỗi bằng sự hy sinh của Chúa Giêsu Kitô, tôi tìm được sự bình yên và mục đích. Tôi thừa nhận Ngài và Ngài chỉ đạo con đường tôi đi. 

Trong thời gian này, tôi gặp được một nữa của đời tôi, anh đã hướng dẫn tôi vượt qua những con đường quanh co của cuộc sống. Anh đã dạy tôi rất nhiều về tình yêu, sự tha thứ, chấp nhận đối với người khác và rằng ý nghĩa của cuộc sống không chỉ khẳng định dựa trên những gì chúng ta làm cho chính chúng ta, nhưng nhiều hơn như vậy trong những gì chúng ta có thể làm cho người khác. Anh là người sẵn sàng dừng xe để giúp người lạ đi xe quá giang đến nơi làm việc khi xe của họ bị hỏng giữa đường. Anh khiêm tốn và giàu lòng vị tha, và là người sẵn sàng bỏ một chút thời gian quí báu của mình để ngừng chân mua cho người đàn ông vô gia cư một bữa ăn tối khi anh đang vội vã về nhà sau một ngày làm việc bận rộn. Anh là người mà ai cũng có thể dựa vào khi cần sự giúp đỡ. 

Tôi rất biết ơn. 

Giờ đây chúng tôi có hai nhóc tì, tôi muốn trao dồi những giá trị tích cực của tình yêu, sự chia sẻ, lòng tốt và lòng từ bi trong cuộc sống của con. Tôi hy vọng rằng hai con có thể thấy được rằng có nhiều niềm vui đáng kể trong việc giúp đỡ những người khác. 

Lễ tạ ơn hai năm về trước, tôi dẫn hai nhóc tì vào sở từ thiện Loaves and Fishes ở thành phố Sacramento nơi tôi sống. Chúng đã được gặp gỡ nhiều người vô gia cư trong đó có trẻ em học ở trường Mustard Seed dành cho trẻ em vô gia cư nằm ngay trong sở từ thiện Loaves and Fishes. Trước khi chúng tôi đến, hai nhóc tì và tôi đi một chuyến đến chợ để mua một số mặt hàng thiết yếu như vớ, áo sơ mi, xà phòng, bàn chải đánh răng, kem đánh răng cho các em. Hai nhóc tì gói từng túi quà và sáng hôm sau chúng tôi đến trường Mustard Seed để tặng quà cho trẻ em nơi đây.






Tháng Bảy vừa qua, hai con và tôi đã thực hiện thêm một chuyến đi đến sở từ thiện Loaves and Fishes. Chúng tôi đến chợ để mua ẩm thực và nước uống cho trẻ em ở đây. Tôi rất biết ơn vì thấy con gái tôi luôn hớn hở khi nói đến việc cho và giúp đỡ những người kém may mắn. Đó thực sự là một cái đẹp. Tôi hy vọng đó là một điều con tôi sẽ trân trọng khi chúng trưởng thành và tiếp tục cho. . . và cho nhiều hơn.


Đó là vào khoảng giữa trưa khi con và tôi đến Loaves and Fishes. Như mọi khi, chúng tôi thấy những người vô gia cư đi bộ xung quanh khuôn viên Loaves and Fishes. Một số người đang xếp hàng để nhận thực phẩm và đồ dùng cần thiết. Con gái của tôi đã tò mò về nơi trú ẩn của những trẻ em vô gia cư và đã rất ngạc nhiên khi biết rằng một số trẻ em ngủ trên đường phố, một số ngủ trong xe hơi, và phần còn lại ngủ ở trại trú ẩn dành cho người vô gia cư. Vào ban ngày, các em tụ tập ở đây để học, ăn uống và vệ sinh.



Lần này, chúng tôi không gặp được các em vì các em đang bơi tại một hồ bơi công cộng nằm trong công viên Mckinley lân cận. Thay vào đó, chúng tôi được đưa đi tham quan một vòng quanh trường Mustard Seed và các lớp học của các em.

Kế hoạch tiếp theo của tôi là sẽ lập một nhóm để chuẩn bị và phục vụ bữa ăn trưa cho tất cả những người vô gia cư đến Sacramento Loaves and Fishes.


Nhóc tôi không hoàn toàn hiểu được tại sao có người vô gia cư và đối với nhiều người trong chúng ta cũng không thể hiểu làm thế nào một người sống trong một đất nước hào phóng, giàu lòng trắc ẩn và vị tha có thể trở thành vô gia cư. Nhưng bất cứ tình huống nào đã đưa đẩy họ đến hoàn cảnh này, chúng ta có một cơ hội để làm một sự khác biệt và có thể đốt một tia hy vọng. Chắc chắn rằng những người này sẽ không bao giờ biết tên của bạn, họ sẽ không biết bạn phải làm việc cực nhọc ra sao để kiếm tiền, hoặc những khó khăn mà bạn đang phải chịu đựng, nhưng tôi tin rằng không có công việc tốt sẽ trở nên vô ích.  Học cách cho đi để tạo ra ý nghĩa và mục đích. Cái đẹp của sự cho đi là chúng ta có thể là người hoàn toàn xa lạ và chỉ cần một hành động thật đơn giản, chúng ta có thể khôi phục lại niềm tin và chuyển núi dời non.
